Copper House Bar & Brasserie in Berkhamsted have kindly sent us a couple of Prosecco cocktail recipes for you to try out in celebration of National Prosecco Day…

Copper House Bar & Brasserie re-opened with a bang on Wednesday 29 July. Their entrance features a full floral arch to celebrate re-opening and bring the gorgeous high street back to life. An extensive customer survey completed during lockdown by over 1400 customers helped them to refine their food, drink and event offering and has seen them re-brand the Restaurant to a Brasserie.

Every Friday and Saturday in August, in partnership with Moët & Chandon, order a glass of champagne or any one of their champagne cocktails and you’ll be given 2 dice. Throw 2 6’s and you will win another glass for free. In addition, there is a new weekly events programme for customers to enjoy.

Copper Strawberry Mojito

Ingredients:

50ml White Rum
25ml Freshly Squeezed Lime Juice
2 Brown Sugar Cubes
4 Fresh Strawberries
1 Small Bunch of Fresh Mint
25ml Prosecco
Crushed Ice

Method:

In a tall glass, muddle 3 of the strawberries with the brown sugar (using a wooden muddler or back of a long spoon). Add in lime juice, rum and crushed ice. Smack the mint leaves between your hands to release the flavour and use a long stirrer to mix all the ingredients. When mixed, add prosecco at end to top off the glass and garnish with a fresh strawberry and sprig of mint.

Hugo

Ingredients:

25 ml Elderflower Liqueur
25ml Gin (plain not flavoured)
75ml Prosecco
1 Small Bunch of Fresh Mint
Cubed Ice

Method:

In a wine glass, fill halfway with ice cubes. Pour in the elderflower liqueur and the gin and stir with the ice. Top with the prosecco and a few mint leaves.
